    Hi Laura,
I have heard of University of Southern Colorado, they have a
paralegal certificate program. It so happens that at the
college I work at is offering the same program. It is run by
the Legal Center. It cost about $1000. There are two parts to
it at about $500 apiece. I spoke to the attorney teaching the
class at my college about the program. She said it is a good
program. I have the same situation you do. My hours at work
change too much. I wouldn't be able to attend class all the
time. The attorney suggested I take the program online.
    Other programs are
    PCDI
    Blackstone School of Law
    Paralegal Institute- Good Program
    Education Direct
Also check out nolo.com for information. Good book is
    Independant Paralegal Handbook
    Good Luck
