    I'm sorry to say Simone but the process from here is to take
    her to court, win a judgment, and then somehow go about
    collecting that judgment.
    As she's already vacated the rental property, you may or may
    not still have to serve her with an eviction notice, but
    regardless you'll have to file with rent court to get a
    hearing scheduled, and then go before the judge and explain
    your side of the story, at which time the judge will
    (hopefully) then award you a judgment.
    It's up to you whether or not you think it's worth going
    through this process, because even if you win a judgment,
    you'll have to somehow collect it.
    I'm so sorry you had to learn this ugly lesson in landlording,
    and next time you think about giving a tenant a little extra
    time on the rent, remember two things:
    1. The eviction process takes forever anyway, so you might as
    well get started as soon as they become late, and
    2. No good deed goes unpunished.
